In a bowl, combine 1 cup of Semolina with 1/2 cup of Yogurt and 1/2 cup of warm Water. Stir, cover, and let rest for 10 minutes so the semolina soaks and softens.
Meanwhile, heat a little oil in a pan and sauté 1 small Onion until translucent. Add 1/2 cup chopped Capsicum, 1/2 cup chopped Tomato, and 1 finely chopped Green Chilli (adjust to taste); cook for 2–3 minutes until vegetables are slightly tender.
Stir in 1/3 cup Sweet Corn, 1/2 tsp Chilli Flakes and salt to taste (Salt). Cook another minute, then remove from heat and let the filling cool slightly.
Fold the cooled vegetable mixture into the soaked semolina, then grate in 1/2 cup of Cheese and mix to form a soft, slightly sticky dough. If too thick, add a splash of water; if too wet, sprinkle a little more semolina.
Divide the mixture into equal portions and shape into round patties or sandwich discs about 1/2 inch thick. Place a little extra cheese between two discs to make a sandwich, sealing the edges gently.
Brush each sandwich with a little oil or butter and either shallow-fry in a nonstick pan over medium heat for 3–4 minutes per side until golden and crisp, or bake at 200°C (400°F) for 12–15 minutes, flipping halfway, until browned and the cheese melts.
Serve hot with chutney or ketchup. These sandwiches are best enjoyed immediately while the exterior is crisp and the cheese is gooey.
