Chop your green onions into small pieces.
In a bowl, add your ground chicken, oyster sauce, soy sauce, minced garlic, cornstarch, white pepper, black pepper, salt, and your chopped green onions to make your filling.
In a pan on medium heat coated with Cooking Oil Spray, add your filling and sauté until cooked through. Set aside to cool.
Dip your rice paper into water to soak it. Do not over-wet or it will become soggy, and don’t wait longer than 1 minute after wet or else it will get too soggy.
Place your wet rice paper down and in the center, add a scoop of your cooked filling and wrap it into a square, sealing the filling inside.
Place your squares back on the same non-stick pan on medium-low heat and cook on each side until the rice paper turns light brown and crispy.
