Method
Lightly crush the aromatic spices—Green Cardamom Pods, Cloves, Cinnamon Stick, and Black Peppercorns—and thinly slice or grate the Ginger so they release maximum flavor.
Place the crushed spices and ginger into a small saucepan with Water and bring to a gentle boil to infuse for 3–5 minutes.
Add the Assam CTC Black Tea to the spiced water and simmer for 2–4 minutes, depending on how strong you like your tea.
Stir in Sugar to taste and make sure it dissolves completely while the tea simmers.
Pour in the Whole Milk, increase the heat slightly and let the chai come just to a boil, then reduce heat and simmer for another 2–3 minutes to achieve a creamy meld of flavors.
Strain the chai into cups to remove the spices and tea leaves, taste and adjust sweetness if needed, then serve hot.
