Wash the kumquats
Rinse the kumquats under cool running water and rub away any dirt. Pat them dry, then roll them gently on the counter for a few seconds to help loosen the juice before cutting.
Juice the kumquats
Cut each kumquat in half and squeeze the juice into a small bowl, picking out any seeds as they fall. Press firmly until the fruit gives up most of its liquid, then set the juice aside.
Mix and serve
Divide the ice cubes between two glasses, pour in the fresh sugarcane juice, and add the kumquat juice. Stir gently until the drink looks evenly mixed, then serve right away while it is icy and bright.
