Method
Bring about 4 cups of Water to a rolling boil.
Warm your teapot and cups by rinsing them with a little of the boiling water, then discard that rinse.
Place 1 tablespoon of Gunpowder Green Tea into the warmed teapot and add 1–2 tablespoons of Granulated Sugar, or to taste.
Pour a small amount of the boiling water over the tea leaves to rinse them (about 1/4 cup), swirl for 10 seconds, and pour that water away — this removes dust and awakens the leaves.
Pour the remaining boiling water into the teapot, add a generous handful of Fresh Spearmint (stems and leaves), cover, and let steep for 3–5 minutes depending on how strong you like it.
Stir gently to make sure the sugar dissolves, taste, and adjust sweetness or steeping time if needed.
Ladle or pour into cups and enjoy immediately; for a traditional touch, pour from a height to aerate and create a light foam.
