Wash the mint
Rinse the fresh spearmint well under cool running water, gently rubbing the leaves and stems to remove any grit. Shake off the excess water, then set aside a few nice sprigs for serving and keep the rest ready for the tea.
Heat the water
Pour the water into a saucepan and place it over medium-high heat. Bring it just up to a boil, watching for steady bubbles across the surface.
Steep the tea
Add the gunpowder green tea, the washed mint, and the granulated sugar to the hot water. Lower the heat and let the mixture simmer very gently for 2 minutes, then take it off the heat and let it steep for 3 minutes more, until the tea smells deeply minty and the sugar has fully dissolved.
Strain and serve
Strain the mint tea into cups or small glasses to catch the tea leaves and mint. Tuck the reserved mint sprigs into each serving and serve hot.
