Season short ribs well with Salt (for searing) and pepper. Sear hard on all sides in a hot pan with Neutral Oil (for searing). Remove from pan.
Remove most of the fat from the pan. Add Garlic (crushed), Ginger (sliced) and cook while stirring occasionally for 3 minutes.
Deglaze with Sake.
Add Honey, Dark Soy Sauce and Star Anise. Stir until combined.
Add short ribs, cover with [Beef Stock](1093], and cook at 325°F covered for 3 hours.
Once tender, strain off liquid and thicken with a cornstarch slurry.
Serve over mashed potato with plenty of sauce and sliced Scallions (sliced).
